I may have underestimated how much time my jobs would take to run and was wondering if it’s possible to increase walltime after having started running jobs on SLURM?

Looks like you can indeed!
scontrol update jobid=<job_id> TimeLimit=<new_timelimit>
Although I have yet to try it myself.
